Sumptuous dishes prepared using fresh local produce are served up daily, from authentic Jamaican Jerk barbecues to magnificent candlelit 5-course affairs.

The food is an absolute joy, with one menu that changes daily, read out to you by your waiter and containing just a few options.

Service is exemplary; extremely personal - staff know every guest by name and will go out of their way to accommodate requests.

Tasteful bamboo furnishings and daybeds create a mood of laid-back island charm with a cinematic panorama of the indigenous natural landscape. A large painting of Bob Marley with guitar in hand announces a well-stocked 24-hour bar for you to enjoy drinks and tasty homemade treats throughout the day and night.

Dinner is served from 7:30 until around 9:30. You can, for an extra charge have a beautiful private dinner in the caves, lit up with hundreds of candles, the waves crashing in and your own personal waiter. This is a wonderful option and is very popular so book as far in advance as you can. The main location for the normal nightly dinner is great. A deck and candlenight with nothing but the moon and stars above you but you can have dinner anywhere on the property for no extra charge. So if you find what you think would be the perfect spot for you, just ask!

The menu for dinner also changes daily with a few starters and usually two main meals and a choice of desserts. Your typical dinner could be jamaican beef patty, curry conch, lobster, steaks, Jerk chicken, all freshly prepared and cooked to perfection. You can also order a combination of the dinner options so you never have to miss out.

Get ready for some of the best rum-based cocktails you've ever tasted - the experienced bartenders will make you anything you like, using the freshest ingredients. The Blackwell Rum Bar was created from two of the many limestone grottos; the cave has a full open bar, where you can enjoy after dinner drinks - or cocktails made with original Blackwell Rum. The Lounge area is furnished with candlelit cocktail tables and opens up to the turquoise ocean and is fully furnished with cut stone tables and benches built by local stone masons. Open evenings from Wednesday to Saturday, weather permitting.

The Sands Bar is set on the edge of the property and is a cool spot any night of the week. The large, blue-tiled bar with inset stonework and wicker accents provides a relaxing daytime retreat with a pristine seaside view and comfortable lounge chairs for endless sessions of sunninng and chilling. Things heat up at night, especially on Wednesday and Saturday evenings when the bar is open to the public and Jerk chicken is prepared on-site for a dose of true island living. Activities & Things To Do

Various island activities are available, from kayaking and snorkeling to bicycling and nature tours, all arranged with a smile by The Caves' obliging staff. Guests are left to their own choices and the pace is as slow as you want it to be.

If you are looking adventure in the water, the Caves has its own guide and cliff-diving expert to accompany you on a snorkeling expedition around and even through the natural caves. The snorkeling is really good with opportunities to see a wide vairty of sea-life such as squid, lion fish, rays, eels and maybe even dolphins. If you want to swim without the guide thats fine too. The water-sports locker is always open and you can help yourself to any gear (life vests, kayaks, snorkel gear, sunscreen, aloe gel) that you might need.

Off site activities such as parasailing, jet skiing and swimming with dolphins can be arranged through the hotel.

Access to the sea is predominantly via a series of characteristic jump spots, ranging from baby options just a few feet above the water to those more than 30 ft high. There are alternative entrances by ladder. The spots are often attached to one of the private lounging areas carved into the side of the cliffs, with umbrellas and views to die for.

There's a small saltwater pool and hot tub with similar gorgeous vistas, a great place to meet others at the pool to have a few drinks and watch the sunsets.

The Caves has a sauna and steam room and a small but excellent spa. The spa hut is open air with a patio and out-door shower right over the ocean. Rated as one of the Top Five Jamaican Spas by Ocean Magazine, The Caves' Aveda Amenity Spa offers a selection of treatments that promote the kind of healing that resonates long after your stay.

The in-house therapists will cater to your every need and spoil you with their trademark Jamaican brown sugar body scrub, that will leave your skin feeling as soft as a newborn's. This spa is a sanctuary that will relax you even before your treatment begins. You can arrange for a treatment in a shaded cabana, a candle-lit cave or outdoors under the replenishing island sun. Complimentary yoga classes are held twice a week on Wednesday and Saturday mornings.

There is an indoor hot tub available at an extra charge for private bookings only from 5.30 until 9.30pm. The tub is huge with a large rain shower and comfortable padded bench with soft fluffy towels. You'll receive a fruit and cheese tray and anything you want to drink. The hot tub faces a large window where you can watch a beautiful sunset.

Evenings at The Caves are quiet and relaxed with no noisy entertainment. Those looking for nightlife easily walk to some lively party spots in Negril, where live music, dancing and a vibrant scene can be found most nights.
